Silver Post Medal for All Time! 267 Posts We made these sugar cookies for a Christmas party at our taekwondo dojang (school). The boys helped us make them, especially the red and green colored belts. We also did a separate batch of black belt cookies.
My friend Stephanie loaned me the "Ninja" cookie cutters for the occasion, but this look could be done with any gingerbread man cookie cutter.

Yield: 4 dozen
Ingredients:
- Cookies
- 1/3 cup butter ($.50)
- 1/3 cup butter flavored shortening ($.50)
- 2 cups flour (all purpose) ($.25)
- 1 egg ($.50)
- 3/4 cup sugar ($.50)
- 1 Tbsp milk
- 1 tsp baking powder
- 1/4 tsp salt
- Icing
- 1 cup powdered sugar ($.50)
- 1/4 tsp vanilla extract
- 2 Tbsp milk
Steps:
- Using a stand mixer, beat softened butter and shortening on medium until combined, about 30 seconds.
- Add in all remaining cookie ingredients, except start with only half the flour. Mix until thoroughly combined, then beat in the remaining flour. Do not over mix
- Divide dough into 2 -3 manageable balls and refrigerate for about 3 hours.
- Preheat oven to 375 degrees F.
- Flour a counter or rolling surface and roll out the dough to the desired thickness. Cut as many cookies out of each roll of dough as possible.
- Place cookies on an ungreased cookie sheet. Bake for 7 - 8 minutes until lightly brown. Cook on a rack
- Once cool, decorate cookies with icing or frosting. We mixed the Icing ingredients together, adding milk very slowly until it was the desired consistency. We probably added about 2 Tbsp. of milk. Orange juice could have also been used.
- We painted the icing on because we wanted to mimic the taekwondo uniform, leaving the head, hands and feet bare. You could also drizzle or dip the cookies to coat them. After they are iced, allow to dry until firm (about an hour).
- Once the icing has hardened, add the colored belt using red or green icing or decorator frosting. Allow this icing to harden as well
- To get the cookies to the party without ruining the decorations, I carefully stacked them on top of each other so that the rows protected the belts below. It seemed to work really well. We received many compliments on the cute cookies.
Next time, I will do lemon extract or orange juice in the icing instead of vanilla, to offset the sweetness of the powdered sugar. You could also add peppermint or any other extract or flavoring
