I came up with this combination for broccoli rice casserole for a holiday potluck party for work. We have several vegetarians, plus one allergy to egg, one to corn and one to wheat. This is the altered result. It would probably be easiest to divide this into approximate thirds for smaller groups.

Here's an easier way to prepare yours in a crockpot.
2 cups rice
2 pkg 10oz chopped broccoli or 1 16 oz bag
1 pound velveeta, cut up
stick of butter
1 cans cream of chicken/celery or mushroom soup
1/2 cup milk
Put all in crockpot, cook on high 2 hours and low for an hour.......AWESOME AND SUPER EASY
You can also add boneless chicken to this and make it a main entree.
Almost all commercial "cream of" soups contain wheat, & all of Campbell's "cream of" soups most certainly do contain wheat. Did you read the label, especially near the end? Wheat is used in the "cream of" soups as a thickening agent, in the form of wheat flour.
I could kiss your feet Lynn! My family also has severe allergies to wheat and eggs, and I'm always stumped as to what to serve! Kudos to you for publishing this recipe and thanks from all of us whose meal choices could put us in the hospital!

Cream of mushroom soup has both wheat and corn ingredients.
This is NOT GLUTEN FREE! Campells soups has wheat as a thickener! Please read labels!
Most of the cream of anything soups does have wheat and dairy in them. Alot of the bullion products have wheat unfortunately.
Instead of cream of whatever soups use a short grain rice, it will produce a little creaminess and instead of bullion there are some really good stock that do not have wheat in them.
Almost all of the canned soups have wheat in them. I have gluten allergy so the easiest thing to do is make your own with gluten free flour, milk, butter and mushrooms. Most health food stores do carry a gluten free version of the cream soups. Most jar alfredo sauces do not have wheat but do have corn starch, I have found they make a good substitute for cream soups in many recipes.
