I have lost my recipe for candy cane cookies using peppermint extract. Does anybody happen to have this recipe? I would greatly appreciate any help I can get with this, as they are well liked in our family for Christmas. Thank You in advance!

The recipe that I have is called Meringue Candy Canes. It makes 3 doz. candy canes. Prep time is 30 min. and bake @200 degrees F for 1 1/4 hrs.
Ingredients:
3 egg whites (at room temp)
1/2 tsp. cream of tartar
1/4 tsp salt
1/2 c. sugar
1/2 tsp. peppermint extract
red food coloring
Directions:
Heat oven to 200 degrees F with oven racks in middle of oven. Fit large pastry bag with 1/4 inch tip. Line 2 large sheets with parchment paper. In med. bowl, beat egg whites, cream of tartar, and salt at med. speed till foamy.

Candy Cane Cookies
1 cup butter or margarine
1 cup powdered sugar
1 egg
2 teaspoons vanilla
2-1/2 cups flour
1 teaspoon salt
1/2 cup finely crushed candy cane mixed with 1/2 cup sugar
1/2 teaspoon red food coloring
Mix all ingredients. Split dough into equal portions.
Color one portion of the dough red.
Refrigerate the dough long enough to be able to easily work with it.

Cookies
1 (18-oz.) roll Pillsbury® Refrigerated Sugar Cookies
2 tablespoons unsweetened cocoa
Icing
1 (16-oz.) can chocolate fudge frosting
1/8 teaspoon peppermint extract
8 round hard peppermint candies, crushed
1. Heat oven to 350°F. Break up cookie dough into large bowl. Add cocoa; beat with electric mixer until well blended.
2. On lightly floured surface, roll out half of dough at a time to 1/8-inch thickness. With 2 1/2-inch heart-shaped cookie cutter, cut out cookies. Place 1/2 inch apart on ungreased cookie sheets. Repeat with remaining dough, rerolling as needed.
3. Bake at 350°F. for 10 to 12 minutes or until set. Remove cookies from cookie sheets; place on wire racks. Cool 5 minutes or until completely cooled.
4. In small bowl, combine frosting and peppermint extract; blend well. Spread about 2 teaspoons icing onto each cookie. Sprinkle each with about 1/4 teaspoon crushed candy.
My mother gave me the inspiration for the recipe I use...take a standard sugar cookie dough recipe, and prepare as you normally would. Divide the dough exactly in half, and use red food coloring in one half, and leave the other half white. Then take crushed candy canes (a BUNCH), and mix into each ball by hand.
This is one that I've tried and even made "wreaths" from using green instead of red and skipping the peppermint

1 cup butter or margarine -- softened
1 cup powdered sugar
1 large egg
1 teaspoon almond extract
Mix first 6 ingredients together well.
Add flour, baking powder and salt. Mix well.
Divide dough into 2 equal portions. Add food coloring to 1 portion. Blend well. Roll 1 teaspoon of each color dough into ropes and 5-1/2-inches long. Lay them side by side. Pinch ends together. Twist to form a spiral. Lay on ungreased baking sheet. Shape to form canes. Wreaths are easy to make too. Bake in a 350-deg. F. oven for about 10 minutes until pale gold. Cool on sheet for 2 to 3 minutes then remove. Makes about 4-1/2 dozen.

Help I have lost my Mother's candy cane meringue cookie recipe. This was my children's favorite Christmas cookie. The candy cane was actually in the meringue....please help
